What Each Nutrient Does
Organ meats are among the densest natural sources of the nutrients below — compounds nutrition science has studied for a century. Here is the role each plays in the body.
Preformed Vitamin A (Retinol)
Vitamin A in its active form — no conversion required. Supports normal vision, immune function, and skin health.
Vitamin B12
Supports energy metabolism, red blood cell formation, and a healthy nervous system.
Heme Iron
The iron form found in animal foods. Supports oxygen transport and healthy red blood cells.
Folate
The natural food form of B9. Supports cell division and red blood cell formation.
CoQ10
Naturally concentrated in heart tissue, where energy demand is highest. Supports cellular energy production.
Selenium
A building block of the body’s own antioxidant enzymes. Supports normal thyroid function.
Copper
Iron’s working partner. Supports energy production and connective tissue formation.
Collagen & Glycine
The structural proteins of connective tissue. Support joints, skin, and recovery.
CLA
Conjugated linoleic acid — a fatty acid that concentrates in the fat of pasture-raised, grass-fed cattle. One reason the sourcing is the recipe.
DAO
Diamine oxidase — the enzyme the body uses to break down histamine. Kidney is one of the few whole foods that naturally contains it.
Adiponectin
A signaling protein native to marrow fat — one of the compounds that make whole marrow more than its minerals.
Choline
A building block of every cell membrane. Supports normal fat metabolism, and is the raw material for the neurotransmitter acetylcholine.

Bioavailability
The Form Is the Function
Bioavailability is the fraction of a nutrient your body can actually absorb and use. It is why the same milligram on two labels is not the same milligram in your bloodstream — the form it arrives in decides.
Iron from animal foods comes largely as heme iron, absorbed at roughly 15–35%. Non-heme iron — the form in plants and most synthetic pills — is absorbed at roughly 2–20%, depending heavily on the meal around it.
Plant carotenoids must be converted into active vitamin A, and the exchange is steep — it can take about 12 micrograms of beta-carotene from food to yield 1 microgram of retinol. Liver carries retinol itself: already in the active form.
Nutrients cooperate. Vitamin A metabolism depends on zinc; iron absorption is shaped by what accompanies it; B vitamins work as a team. A whole organ brings its own supporting cast to the table.
None of this is magic. It is simply the difference between a nutrient in its food form and a nutrient on its own.
The Method
Freeze-Dried, Never Heated
Cooking an organ changes it. Several B vitamins are heat-sensitive, and delicate compounds degrade under high temperature. Freeze-drying takes a different path: the raw organ is frozen, then the water is drawn off under vacuum at low temperature — removing only the water, and leaving the nutritional architecture of the raw organ intact.
The result is the closest thing to eating it the way your ancestors did — without eating it the way your ancestors did.
